Chocolate Peanut Overnight Oats

Peanut butter and chocolate is a classic combination and you can NOT go wrong with this one! With a fun dark chocolate shell and a creamy protein oat center, it is hard to believe that this recipe is HEALTHY! Hitting all 3 macronutrients, this is a perfect option for any meal that you're craving a little extra chocolate. Simply let it sit overnight and enjoy cracking the shell the following day. You will be sure to love this fun and easy recipe.

Chocolate Peanut Overnight Oats

PREP TIME:  5 minutes
YIELD:  1 serving

INGREDIENTS:

  • 1/2 cup Old Fashioned Oats
  • 1 scoop Chocolate Protein Powder of choice
  • 1/2 cup Almond Milk
  • 1 tbsp Powdered Peanut Butter
  • 1 tsp Chia Seeds
  • 1 tbsp Maple Syrup

Chocolate Shell & Toppings:

  • 40 g Dark Chocolate Chips
  • 1 tbsp. VTC C8 MCT Oil
  • Peanuts
  • Drizzle of Peanut Butter

INSTRUCTIONS:

  • In a bowl mix together the ingredients listed above. The texture should be a soupy consistency. 
  • Melt the together to dark chocolate chips and MCT oil. Microwave in increments of 10-20 seconds, stirring between. This will ensure the chocolate doesn't burn.
  • Pour melted chocolate evenly over the top of the oats mixture. 
  • Let sit in refrigerator anywhere from 2-24 hours.
  • Add additional toppings and now you can crack that shell & enjoy!
