YIELD: 2-5 Jars
INGREDIENTS:
- 1 Cucumber
- 8-10 Grape Tomatoes
- 1-2 cups Feta Cheese
- 1 Red Onion
- Fresh Romaine Lettuce
INSTRUCTIONS:
1. Chop the Cucumber, Tomatoes, Red Onion, & Romaine Lettuce
2. Add to Jar in order from bottom to top: Cucumber, Grape Tomatoes, Feta Cheese, Red Onion, Romaine, Lettuce
3. Top with lid and store in refrigerator for up to a week.
Creamy Basil Vinaigrette
PREP TIME: 5 minutes
YIELD: about 3 servings
INGREDIENTS:
- 1/4 Avocado
- 1 handful Fresh Basil Leaves
- 2 tbsp. VTC C8 MCT Oil
- 1/4 cup Olive Oil
INSTRUCTIONS:
1. Add Ingredients to a blender
2. Blend for 2-3 minutes or until creamy
3. Enjoy over a fresh salad or store in refrigerator for up to a week.
