Strawberry Banana Granola Cups
On-the-go granola cups is a fun way to enjoy a fresh snack with your favorite fruit.
Snacking on the go just became a whole lot sweeter! These granola cups are a healthy snack or grab and go breakfast that can be topped with your favorite fresh fruit to make it your own. This recipe is extremely simple with only a few key ingredients that are often pantry staples.
Let's break it down... First, add your ingredients to a mixing bowl:
Oats, Nut Butter, Maple Syrup, Cinnamon, Pinch of Salt, & VTC's Collagen
That's it! Just mix until well combined.
Add the mixture to a lightly greased muffin pan & make small indents to create the cup shape.
And just like that... It's time to bake!
20 minutes later and some extra cooling time, it is time to add your toppings: Vanilla Greek yogurt & fresh fruit to top it all off
Store in refrigerator for later or enjoy them fresh... either way they will be loved!
Strawberry Banana Granola Cups
PREP TIME: 30 minutes
YIELD: 6 cups
INGREDIENTS:
- 2 cups Old Fashioned Oats
- 1 scoop VTC Collagen Peptides
- 1/2 cup Nut Butter
- 1/2 cup Maple Syrup
- 1-2 tsp Cinnamon
- Pinch of Sea Salt
TOPPINGS:
- Vanilla Greek Yogurt
- Fresh Fruit (Cut Strawberries & Sliced Bananas)
MATERIALS:
- Muffin Pan
INSTRUCTIONS:
- Add ingredients (minus toppings) to mixing bowl
- Mix until well combined
- Evenly distribute mixture into lightly greased muffin pan
- Press the middle down to create a cup shape
- Bake at 350 degrees Fahrenheit for 20 minutes and edges are gold brown
- Let the granola cups cool
- Add a spoonful of Greek yogurt to each cup
- Add cut strawberries and sliced bananas on top of yogurt
- Store for later or enjoy immediately!
