Strawberry & Coconut Cream Smoothie Bowl

Love is in the air and this sweet, creamy and nutritious smoothie bowl is perfect to jumpstart your Valentine's Day! With a mix of healthy fats, protein, vegetables, and fiber this bowl is wholesome enough to eat for breakfast any day of the week.

The toughest thing about making smoothie bowls come together into a thick, luscious texture relies on a few simple tips, so you aren't battling your blender for 15 minutes.  Once you have this process mastered you can easily substitute smoothie bowls into your standard smoothie routine.  Don't get us wrong, we LOVE a good smoothie, but for those mornings (or anytime of day) when your mood calls for something more, bowls are a great option and equally as versatile!

NUTRIENT PACKED INGREDIENTS

HEALTH BENEFITS:

ALMOND MILK. A low calorie, low sugar milk alternative, only one cup of almond milk can provide up to half of your daily vitamin E requirement.   This powerful antioxidant can reduce inflammation , stress and heart disease.  Many almond milks on the market are enriched with vitamin D  and calcium, assisting with bone health and prevention of several diseases.  [1, 2, 3, 4, 5, 6, 7, 8, 9, 10].

BERRIES. These refreshing fruits are not only full of flavor but are loaded with free radical fighting  antioxidants,  blood sugar reducing properties, and appetite reducing fiber. BANANAS. CAULIFLOWER. You may not expect cauliflower to be a new staple in your smoothie recipes but this nutrient packed vegetable can go virtually undetected. Are you asking yourself why would I add this  to my smoothie? Let's begin with one cup of cauliflower provides over 75% of your daily vitamin C and 20% of your daily vitamin K.  Plus smaller amounts of other essential nutrients. Like many other fruits and vegetables, cauliflower carries compounds that reduce inflammation, risk for heart disease and cancer, and fights signs of aging. [20, 21].

Strawberry & Coconut Cream Smoothie Bowl

PREP TIME:  10 minutes
YIELD:  2 smoothie bowls    

INGREDIENTS:

  • 2 cups frozen strawberries
  • 2 cups frozen cauliflower rice
  • 2 frozen bananas
  • 2 tbsp. VTC C8 MCT Oil
  • 1/2 cup yogurt - regular, greek, or dairy free
  • 2 scoops VTC Collagen Peptides
  • 1/3 cup milk of choice - almond, coconut, oat, dairy, etc.
  • 2 tbsp coconut cream

TOPPINGS:

  • 1/2 cup fresh strawberries
  • 1/2 cup fresh blackberries
  • 2 tsp chia seeds
  • 2 tsp toasted coconut flakes
  • 2 tbsp coconut cream + 1 tsp oat milk

INSTRUCTIONS:

  • In a high speed blender, add in frozen strawberries, cauliflower rice, and bananas. Let sit in the blender for 2-3 minutes to soften slightly. Turn the blender on low and let it slowly chop up the fruit into small pieces.
  • Add in yogurt, collagen powder, milk and coconut cream and blend starting on low and working the speed up slowly, until smooth. Use a tamper or scrape down the sides as needed.
  • Pour smoothie mixture into two bowls and top with a drizzle of coconut cream, fresh fruit, chia seeds, and coconut flakes.
